Every board begins with careful wood selection, as not all timber is suitable for food contact surfaces. Our craftspeople choose hardwoods with tight grain structure that resists knife scarring, appropriate density that provides stable cutting surfaces without excessive dulling of knife edges, and natural antimicrobial properties that make wood inherently safer than plastic for food preparation. The wood is carefully evaluated to ensure it's free from defects, properly dried to prevent warping, and suitable for the demanding environment of kitchen use where moisture, temperature changes, and constant use test materials severely. The construction process involves precise milling to create flat, true surfaces essential for safe, effective cutting.
